This Mushroom Noodles Stir Fry is a quick and light lunch/ dinner option that only takes less than 15 minutes to prepare and cook. It’s also so delicious and perfect quick fix for kids. This recipe is also great for mushroom lovers, as well as vegetarians and vegans alike.

PREPARATION AND COOKING:
- Start by preparing all your ingredients. Dice your mushrooms and onions and chop the cilantro (dania)/parsley/chives.
- On a large non-stick pan or wok heat the cooking oil over medium heat then add in the onions and mushrooms. Sauté for 5 to 8 minutes. They will release their own water so keep stirring till all that water evaporates.
- As the mushrooms are cooking, cook your noodles as per the package instructions, drain then set aside.
- Add all the sauce ingredients into a small bowl and stir well to combine then add to the mushrooms.
- Follow by adding the pre cooked noodles to the mushrooms and the sauce. Stir well till well combines. Allow to cook for 2- 3 minutes then turn off the heat.
- Garnish with the cilantro/parsley/chives, and serve hot.

RECIPE TIPS AND TRICKS
- Since soy sauce already has salt in it, be careful on the amount of salt you add in if at all it’s necessary.
- You can substitute noodles with any pasta you have on hand. However, don’t cook pasta till al dente but slightly softer but not mushy.
- You can use any onion of choice. White onions and green onions are most flavorful in stir fries.
- I prefer the light soy sauce to dark soy sauce with this recipe. Feel free to even try the mushroom soy sauce or even tamari if you are on a gluten free diet.
- Feel free to use any type of cooking oil you have on hand. Be it olive, coconut, canola etc.
- You can as well add ginger, garlic and chilli in case you want more flavor.

Ingredients
- 2 tbsp cooking oil

- 3 packs noodles, (120g each pack)

- 2 tbsp Worcestershire sauce
- 1 tbsp honey
- 1 tsp corn starch
