Simple Instant Noodles Frittata

This simple instant noodles frittata is so quick and easy to prepare. It is also delicious and filling. It has everything you need for breakfast. From protein in the eggs, carbs in the noodles and veggies from the bell peppers.

It is one of the many breakfast options I have here on the blog and one of those quick fixes one can have in no time. Additionally, it takes less than 15 minutes to have it ready hence perfect for a weekday breakfast when in a hurry to go to work.

This frittata is also very filling and one can swap the veggies and use whatever one has on hand as well as the spices. You can actually make it hot by adding some fresh chilies or cayenne.

How to prepare and cook:

Start by dicing your veggies and shredding your cheese. Then in a large bowl crack your eggs and whisk. Add in black pepper, sea salt & spices (cumin, paprika & coriander powder) and mix them in. Next, add in the red, yellow & green bell peppers (hohos), onions & cilantro (dania leaves). Mix everything well.

On a large frying pan, heat the cooking oil then add in the eggs & veggies mixture. Spread evenly then cover with a lid and allow to cook on low heat for about 2-3 minutes.

Simultaneously as that is cooking, prepare your noodles as per the package instruction then set aside. (Mostly they take 2-3 minutes).

Back to the frittata; remove the lid and add in the cooked noodles. Spread them evenly then add in the cheese if using. You can spread it on one half.

Finally fold the frittata halfway then cover for about 2-4 minutes to allow the cheese to melt.

Remove from heat and serve warm.

Ingredients
  

  • 120 g Noodles
  • 4 eggs
  • 1/2 cup diced onion
  • 1/2 cup diced red bell peppers (hoho)
  • 1/2 cup diced green bell peppers (hoho)
  • 1/2 cup diced yellow bell peppers (hoho)
  • 3 tbsp chopped cilantro dania
  • 100 g shredded cheese more/less as desired (OPTIONAL)
  • 1 tsp cumin powder
  • 1 tsp paprika powder
  • 1 tsp coriander powder
  • Sea salt & black pepper to taste
  • 2 tbsp cooking oil

Method

Notes

You can use any other spices other than those I used.
