Method
- In a large bowl crack your eggs and whisk.
- Add in black pepper, sea salt & spices (cumin, paprika & coriander powder) and mix them in.
- Next, add in the red, yellow & green bell peppers (hohos), onions & clilantro (dania leaves). Mix everything well.
- On a large frying pan, heat the cooking oil then add in the eggs & veggies mixture. Spread evenly then cover with a lid and allow to cook on low heat for about 2-3 minutes.
- As that is cooking, prepare your noddles as per the package instruction then set aside. (Mostly they take 2-3 minutes).
- Back to the frittata; remove the lid and add in the cooked noodles. Spread them evenly then add in the cheese if using. You can spread it on one half.
- Finally fold the frittata halfway then cover for about 2-4 minutes to allow the cheese to melt.
- Remove from heat and serve warm.
