Mushroom fried brown rice is yet another dish that will make you fall in love with brown rice. It is not just delicious, it is healthy, vegan and can be made special and more accommodating by switching up the ingredients to suit you. It is customizable at the same time a crowd pleaser, quick meal especially if you have some left over steamed brown rice or you just wanna spruce up your steamed rice.

I have shown how else you can let mushrooms shine with brown rice in my Brown Rice Mushroom Pilau (Vegan Pilau) recipe. This particular recipe requires just a few ingredients and it is also a quick fix since it only takes less than 20 minutes to prepare and cook as long as the brown rice is precooked.

Incase you want to try another type of fried brown rice, you can try Stir Fried Vegetable Brown Rice (vegan) It is also vegan and can be customized according to the ingredients one has on hand.

Preparation and cooking:

Start by preparing all your ingredients. Dice your mushrooms and onions and chop the chives.

Heat up a large non stick pan/wok on medium heat. Add in the mushrooms and sauté for 5 to 8 minutes. They will release their own water so keep stirring till all that water evaporates.

Once all the water has evaporated, add in the cooking oil and onions. Mix well and allow to cook for a minute.

Add in the cooked brown rice and soy sauce and stir well to combine. Allow to cook for 3- 4 minutes then turn off the heat.

Add in the chives, and serve hot.

Ingredients
  

  • 250 g  button or portobello or cremini mushrooms, diced*
  • 3 tbsp cooking oil**
  • 1 large onion, diced***
  • 2 cups cooked brown rice****
  • 2 tbsp soy sauce*****
  • 1 bunch chives, chopped (optional)******

Method
 

  1. Start by preparing all your ingredients. Dice your mushrooms and onions and chop the chives.

Notes

* You can use any type of mushrooms you have on hand or even mix them up.
**Feel free to use any type of cooking oil you have on hand. Be it olive, coconut, canola etc.
***You can use any onion of choice. Red onion and green onions are most flavourful with this fried rice.
****You can substitute brown rice with white rice but I guarantee you brown tastes better and it’s the healthier option.
*****I prefer the light soy sauce to dark soy sauce with this recipe. Feel free to even try the mushroom soy sauce or even tamari if you are on a gluten free diet.
******You can substitute chives with cilantro (dania) or parsley. Choose your garnish!
