Method
- Start by preparing all your ingredients. Dice your mushrooms and onions and chop the chives.
- Heat up a large non stick pan/wok on medium heat. Add in the mushrooms and sauté for 5 to 8 minutes. They will release their own water so keep stirring till all that water evaporates.
- Once all the water has evaporated, add in the cooking oil and onions. Mix well and allow to cook for a minute.
- Add in the cooked brown rice and soy sauce and stir well to combine. Allow to cook for 3- 4 minutes then turn off the heat.
- Add in the chives, and serve hot.
Notes
* You can use any type of mushrooms you have on hand or even mix them up.
**Feel free to use any type of cooking oil you have on hand. Be it olive, coconut, canola etc.
***You can use any onion of choice. Red onion and green onions are most flavourful with this fried rice.
****You can substitute brown rice with white rice but I guarantee you brown tastes better and it's the healthier option.
*****I prefer the light soy sauce to dark soy sauce with this recipe. Feel free to even try the mushroom soy sauce or even tamari if you are on a gluten free diet.
******You can substitute chives with cilantro (dania) or parsley. Choose your garnish!
