Method
- Preheat your oven to 180°C
- Line a 9″ X 5″ loaf/ bread tin with parchment paper and set a side.
- In a bowl, sift the flour, baking powder and baking soda. Add salt, cinnamon and nutmeg and mix till well combined then set aside.
- Add the chocolate chips to the flour mixture.
- In another bowl, combine the eggs, brown sugar/ molasses, plain yogurt/ buttermilk, vegetable oil/ melted butter and vanilla extract, till well combined. Then add in the mashed ripe bananas
- Bring together the dry and wet ingredients and mix till all is incorporated.
- Pour the mixture into your prepared loaf pan ready for baking. Slice the extra banana in half and place it on top and sprinkle more chocolate chips on top if you have.
- Bake for about 60- 80 minutes at 180°C until the cake is well baked and a toothpick inserted inside comes out clean. Cover with an aluminium foil halfway through to avoid over-browning on top.
- Leave to cool completely, slice then serve. Enjoy
Notes
* Buttermilk is commonly known as maziwa mala. In case you don’t have it on hand, take 1½ cup regular milk and mix with 2 tablespoons of freshly squeezed lemon juice or distilled white vinegar. Let the mixture stand for 5-10 minutes or until it curdles.
