Creamy One Pot Minced Chicken, Veggie & Pasta

A hearty and creamy one pot pasta dish made with minced chicken, steamed carrots, and a silky cashew cream sauce. Perfect for a wholesome family dinner that’s both comforting and nutritious.

Ingredients
  

  • 500 g pasta of choice
  • 2 cups diced carrots, steamed
  • 2 tbsp cooking oil, divided
  • 2 onions, diced
  • 1 cup raw cashews
  • 2 cups water or stock
  • 500 g minced chicken
  • 1 tsp paprika
  • Sea salt & black pepper, to taste
  • Fresh cilantro, parsley, dill, or celery leaves, (for garnish)

Method
 

  1. Prep the veggies: Dice the carrots and onions. Steam the carrots until just tender.
  2. Make the cashew cream: In a cooking pot or wok, heat half the oil. Add diced onions and sauté for 1 minute until translucent. Add raw cashews and fry for 3–4 minutes. Pour in water or stock, cover, and let simmer. Once soft, transfer the cashews with liquid to a blender and blend until smooth and creamy.
  3. Cook the pasta: In a separate pot, cook the pasta according to package instructions minus 2 minutes. Drain and set aside. Reserve some pasta water.
  4. Cook the chicken: In the same pot or wok, add the remaining oil. Once hot, add minced chicken, paprika, salt, and pepper. Cook for about 12 minutes or until browned and cooked through.
  5. Bring it all together: Add the cashew cream to the cooked chicken, stir, and let simmer on medium heat. Adjust seasoning with salt and pepper. Add the drained pasta and steamed carrots. Stir until everything is well coated in the creamy sauce. If the sauce feels too thick, stir in a splash of the reserved pasta water to lighten and loosen it.
  6. Serve & garnish: Garnish with fresh herbs of your choice. Serve hot and enjoy!
