This Creamy Sweet Chili Chicken is a quick, colorful, and flavor-packed dish you’ll love making on busy nights. Marinated chicken is seared to golden perfection, then tossed with vibrant bell peppers, sweet chili sauce, and a creamy Greek yogurt sauce. Ingredients
  

  • 500 g chicken breasts, cubed
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 onion, diced
  • 1 tsp garlic powder
  • ½ tsp oregano
  • 1 tsp paprika
  • ½ tsp cayenne pepper, adjust to your heat preference
  • 1 tbsp tomato paste
  • ¼ cup sweet & chili sauce
  • 1 cup chicken stock
  • ½ cup Greek yogurt, for creaminess
  • 1 tbsp oil
  • Salt & black pepper to taste
  • Fresh coriander or parsley for garnish

Method
 

  1. Marinate chicken with oregano, garlic powder, paprika, cayenne. Rest 10-15 mins
  2. Heat oil, sear chicken until golden (5-8 mins per side)
  3. Add onions & peppers. Stir & cook 2-3 mins
  4. Stir in sweet chili sauce & tomato paste
  5. Season with salt & pepper
  6. Add chicken stock & Greek yogurt. Stir & simmer
  7. Let sauce reduce. Garnish & serve hot
