Preheat the oven: Preheat your oven to 200°C. Line a baking tray with parchment paper or a silicone baking mat.
Prepare the coating: In a bowl, combine the corn starch or flour, salt, black pepper, paprika, cayenne pepper (if using), and garlic powder. Whisk until well mixed.
Coat the wings: Add the chicken wings to the flour mixture and toss until evenly coated.
Arrange on tray: Place the wings on the prepared baking tray in a single layer, making sure none overlap.
Oil and bake: Lightly spray the wings with cooking oil. Bake at 200°C for 30–35 minutes, flipping halfway through.
Prepare the sauce: While the wings cook, mix the barbecue sauce, honey, and soy sauce in a small bowl until smooth. Set aside.
First basting: Remove the wings from the oven and brush generously with the honey BBQ sauce.
Caramelize: Increase the oven temperature to 220°C and switch to grill mode. Grill the wings for 2–4 minutes.
Final glaze: Flip the wings, baste the other side, and return to the oven for another 2–4 minutes until sticky and caramelized.
Garnish and serve: Remove from the oven, garnish with fresh cilantro, and serve hot or cold.
