Method
- Soak the chia seeds: place the chia seeds in a container and add plain water. Mix and allow to soak for 30 minutes to overnight in the fridge.
- Puree the mangoes: Wash your ripe mango, peel then dice. Add the mangoes to a high power blender or food processor and blend until smooth then set aside.
- Assembling the parfait: Add a few tablespoons of the chia pudding on your serving glasses. Follow by a few tablespoons of the Greek yoghurt then the pureed mango. Repeat till the glass is full. Serve & enjoy.
Notes
Incase you don’t have a high speed blender, add a little liquid when you are blending the mangoes so as not to over work it. A food processor can be used instead.
