Mango Chia Parfait

It's mango season! Got lots of ripe mangos and need a way to use them? Try this delicious mango chia parfait recipe and you'll be hooked. It's a healthy treat for breakfast though you can still have it as a snack. It’s a quick and easy parfait to make that only requires 3 main ingredients.

Ingredients
  

  • 1 ripe mango, washed, peeled & pureed
  • 2 tbsp chia seeds, soaked in water
  • cup Greek yoghurt

Method
 

  1. Soak the chia seeds: place the chia seeds in a container and add plain water. Mix and allow to soak for 30 minutes to overnight in the fridge.
  2. Puree the mangoes: Wash your ripe mango, peel then dice. Add the mangoes to a high power blender or food processor and blend until smooth then set aside.
  3. Assembling the parfait: Add a few tablespoons of the chia pudding on your serving glasses. Follow by a few tablespoons of the Greek yoghurt then the pureed mango. Repeat till the glass is full. Serve & enjoy.

Notes

Incase you don’t have a high speed blender, add a little liquid when you are blending the mangoes so as not to over work it. A food processor can be used instead.
