Quick & Colorful Veggie Stir Fry

A quick, vibrant, and flavorful vegetable stir-fry made with bell peppers, carrots, zucchini, and onions, seasoned with a warm blend of coriander, cumin, and paprika. Ready in just 10 minutes — the perfect healthy side dish for any meal!

Ingredients
  

  • 2 tbsp cooking oil
  • red bell peppers
  • yellow bell peppers
  • 2 white onions
  • 4 carrots
  • 4 zucchinis
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Sea salt & black pepper to taste

Method
 

  1. Start by julienning all your vegetables — the red and yellow bell peppers, carrots, zucchinis, and onions. Julienne simply means cutting them into thin, matchstick-sized strips. This not only helps them cook quickly but also makes the dish look extra appealing.
  2. Heat up 2 tablespoons of cooking oil in a wok or large frying pan over medium-high heat.
  3. Once the oil is hot, toss in all the julienned vegetables. You should hear a satisfying sizzle as they hit the pan — one of the best sounds in the kitchen!
  4. Stir-fry the veggies for about 4-6 minutes, keeping them moving in the pan to cook evenly.
  5. Sprinkle in the ground coriander, cumin, paprika, sea salt, and black pepper.
  6. Continue to stir-fry for another minute or two, adjusting the seasoning if needed. Cook to your preferred level of crunchiness — I personally love them with a little bite left in them!
