This simple cucumber tomato salad only takes 5 minutes to prepare hence an easy way of incorporating your veggies in your meals.
This salad has become a staple in our household and everyone loves snacking on it and it really makes me so happy. It also requires only two main ingredients yet incredibly versatile as it goes so well with a variety of meals!
PREPARATION & MAKING THE SALAD:
- Start by dicing the onion if using then place in a bowl of salted hot water and allow them to soak for about 15minutes. This helps reduce the sharp taste of raw onions. (This step is optional)
- Next, wash the cucumber and tomatoes then cube them. Place them in a large mixing bowl and mix.
- Wash the lemon and squeeze some juice then drain the onions and chop the chives/cilantro leaves/parsley leaves if using.
- Add the onion and chives/cilantro leaves/parsley leaves if using to the cucumber and tomatoes and mix.
- In a small jar, add the extra virgin olive oil, lemon juice, sea salt & black pepper then close the lid and shake vigorously for the lemon vinaigrette to be well incorporated.
- Drizzle the lemon vinaigrette over the salad mixture and toss to coat.
- Serve right away or keep in the fridge until ready to serve.

- 1 small red onion, diced (optional)
- 1 bunch chives or cilantro leaves or parsley leaves, to garnish (optional)

- ¼ cup olive oil extra virgin
- ¼ cup fresh lemon juice
- Sea salt & black pepper to taste
