  • Sea Salt & Black Pepper (to taste): Sea salt brings out the natural flavors of the vegetables and balances sweetness and spice while Black pepper adds a gentle heat and a subtle earthiness, enhancing the complexity of the spices without overpowering them
  • Ground Coriander: Coriander adds a warm, citrusy, and slightly nutty note that brightens the dish. It pairs beautifully with cumin and balances the richness of the oil.
  • Ground Cumin: Cumin offers an earthy, warm, and slightly smoky flavor. It’s the grounding spice in this mix, giving the dish a robust base.
  • Paprika (1 tsp): Paprika adds a mild, sweet smokiness and a rich color to the dish. It ties all the flavors together, giving the veggies a hint of warmth and depth without too much heat.
  • Cooking Oil: The oil helps conduct heat, allowing the vegetables to cook quickly at high temperatures while preserving their color and texture. It also carries the flavors of the spices and ensures even seasoning distribution.

How to Make Colorful Veggie Stir Fry

Start by julienning all your vegetables — the red and yellow bell peppers, carrots, zucchinis, and onions. Julienne simply means cutting them into thin, matchstick-sized strips. This not only helps them cook quickly but also makes the dish look extra appealing

Heat up 2 tablespoons of cooking oil in a wok or large frying pan over medium-high heat.

Once the oil is hot, toss in all the julienned vegetables. You should hear a satisfying sizzle as they hit the pan — one of the best sounds in the kitchen!

Stir-fry the veggies for about 4-6 minutes, keeping them moving in the pan to cook evenly.

Sprinkle in the ground coriander, cumin, paprika, sea salt, and black pepper.

Continue to stir-fry for another minute or two, adjusting the seasoning if needed. Cook to your preferred level of crunchiness — I personally love them with a little bite left in them!

This colorful veggie stir-fry makes a fantastic side dish for chicken, beef, pork, rice bowls, noodles, or even as a topping for wraps like spring rolls. It’s versatile, light, and loaded with natural flavor from the spices.
